Esquites “Corn in a Cup”
Ingredients:
1 Tbsp oil
1 Tbsp Slap ya Mama
5 ears of corn on cob with or without husk
¼ cup lime mayo
Half bunch cilantro minced
1 Tbsp cumin
Zest from one lime and half the juice
½ cup cojita cheese
Directions:
If your corn has no husk, coat with oil and season with Slap ya Mama. Roast in oven or smoke for 45 minutes to 1 hour. Cut off cob into a bowl, I like to take a smaller bowl and turn it upside down in the larger bowl and set the cob on the bottom of the smaller bowl and cut from the top of the corn to the bottom. Once corn is off the cob add the rest of the ingredients, mix, and place in a bowl garnish with cilantro, lime wedge, and a little extra cojita cheese.
