Smoked Baby Back Pork Ribs

Ingredients:

1 rack of baby back pork ribs

Yellow mustard

Chef Scout seasoning

Chef Scout bourbon BBQ sauce

Spray bottle of spiced apple cider juice

Butcher paper

Directions:

Get yourself a plastic cutting board and cut the ribs out of their package. Dry off with some paper towels, then cover with yellow mustard, add your favorite rub or Chef Scout’s all-in-one seasoning (see link). Let it rest on a rack in a sheet pan for at least 24 hours.

Set temperature on Traeger to 275 degrees F or whatever smoker you have. Then put them in the smoker. Every thirty minutes or so, take the spray bottle of juice and spray the ribs liberally. Ribs should take 2-4 hours to cook, I check them by picking them up in the middle and see if they start to split. If they do, they are done. Because they are easy to dry out, I cook them just before they are “fall off the bone” tender.

Take them off the smoker and lay out some butcher paper. Place the ribs on the paper and coat them in Chef Scout’s Bourbon BBQ sauce or your own favorite sauce. Let rest for 2 hours in an oven set at warm or the lowest temperature setting.
