Lasagna Soup
Serves 7
Ingredients:
1/2 pound ground beef
1/2 pound ground Italian sausage
S/P to taste
1 yellow onion, chopped
1 Tbsp olive oil
3 cloves garlic, minced
2 Tbsp tomato paste
1 24 oz jar of RAO’s arrabbiata sauce
1/2 Tbsp Bragg 24 herb and spices
7 cups beef or chicken stock
9 lasagna noodles, break into small pieces
10 ounces ricotta cheese or cottage cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
fresh basil
Instructions:
Cook ground beef and sausage in a large pot over medium-high heat until browned. Season with salt and pepper. Drain grease and set meat aside. Then, heat olive oil in the pot and sauté diced onion for 5 minutes. Add minced garlic and cook for another minute. Stir in tomato paste, RAO’s sauce, spices, and broth. Return meat to pot. Bring to boil, add broken lasagna noodles, and cook until tender. Mix mozzarella, Parmesan, and ricotta cheeses. Serve the hot soup with a dollop of cheese mixture and garnish with fresh basil.
