Lemon Pesto Pasta
Serves 4-6
Ingredients:
1 lb pasta of your choice (I used penne)
1/3 cup lemon pesto
Garnish with:
5 oz chorizo cooked crispy
1 Tbsp capers sautéd in chorizo fat
Parmesan
Lemon zest & juice
Directions:
In a pot, add water and season with salt. Bring to a boil.
At the same time crisp up your chorizo and set it aside on a plate with a paper towel to soak up the fat.
In the same pan sauté the capers for about 3-4 minutes, add to plate with the chorizo and set aside for the garnish.
Once the pasta is done, drain and reserve some pasta water in the case you need it to thin out the pesto sauce. Put pasta in the same pot you cooked it in and add room temperature pesto ( this is so the pesto doesn’t over cook and turn olive drab). Toss past and plate. Sprinkle chorizo, capers, Parmesan, and the lemon juice/zest and serve!
