Pozole Verde

Ingredients:                                                                             

1.5 quarts Chicken Stock                     

3# Chicken thighs                                  

2 White onion, halved & roasted        

5 Garlic Cloves roasted                 

1 Bay Leaf                                     

1# Tomatillos halved & roasted       

2 Serrano roasted, peeled deseeded  

2 Poblano, roasted, peeled deseeded

1 Herdez Guacamole salsa            

¼ Tbsp Mexican Oregano                             

2 Tbsp Thyme                      

½ Tbsp Cumin     

½ Tbsp Chile powder  

½ Tbsp Paprika    

½ Tbsp Cayenne pepper          

½ Tbsp Garlic powder          

½ Tbsp Onion powder  

30 oz can Hominy                                             

To taste Salt   

To taste Black Pepper    

¼ cup Canola oil      

Garnish 

Sliced avocado, shredded cabbage,              

sliced radishes, toasted green pumpkin seeds, 

Cojita cheese, and/or fresh cilantro

Directions:

Turn on the oven to 350 degrees. Season chicken thighs with the above ingredients and place them on a sheet tray with a rack (I lined the bottom of my sheet tray with foil for easy cleanup). Roast in the oven for 10 to 20 minutes or until the internal temp of 165 degrees. 

While the chicken is cooking, sprinkle oil, salt, and pepper over veggies and roast in oven with broiler set on high. PAY ATTENTION TO OVEN WHEN BROILING!!! Take roasted tomatillos, serranos, poblanos, onions, and garlic put in a blender or food processor with a bit of fresh cilantro, the chicken stock, and I added some Herdez Guacamole salsa I had left over and blend until smooth. 

Take blended mix strain if desired and add to dutch oven.

In a bowl take shredded cabbage, some chopped cilantro, sliced radish, lime juice and zest, olive oil, a salt/pepper, mix and set aside for garnish.

Bring mixture to a boil then turn down heat until a simmer. Add hominy, oregano, thyme, and season to taste. 

Once the chicken is cool, shred with a fork or if you have a stand mixer, add to mixing bowl and use paddle attachment and put on lowest setting to shred.

Add chicken to the soup, plate in a bowl and garnish with the above ingredients and enjoy!
