Caprese Salad

Serves 2-4

Ingredients:

2 large ripe tomatoes, sliced ¼ inch thick (heirloom tomatoes if you can find them, multi color makes for a pretty plating)

1 (8 oz ball) fresh mozzarella, shredded or torn into small pieces

Fresh basil julienne cut

Olive oil for drizzling

Balsamic reduction for drizzling

Sea salt and cracked black pepper

Directions:

Slice your tomatoes about ¼ inch thick.

Shred mozzarella into small pieces.

Julienne cut your basil

For plating, stack the tomatoes so they over lap each other. Sprinkle the mozzarella and basil over top. Drizzle olive oil and balsamic reduction along with sea salt and freshly cracked black pepper.
