RotKohl (Braised red cabbage)

Serves 4

For the Rotkohl (braised red cabbage):

2 sliced of bacon

1/4 piece small dice onion

1/4 head cabbage thinly sliced

1 apple peeled small dice

2 Tbsp red wine vinegar

½ Tbsp jelly

2 Tbsp red wine

1 Tbsp sugar

1/4 cup chicken stock

Sachet: 2 clove, cinnamon stick 1/2, 6 juniper berries, cracked black pepper, bayleaf, thyme sprig

Directions:

In a small sauce pan, add bacon and render set aside. Add onion and apple and sweat lightly. Add the rest of the ingredients plus sachet and simmer for 45 minutes to an hour checking frequently to ensure that liquid stays in the bottom of pan. You can cook in the oven at 350 degrees for the same time.
