Smoked Brisket Wraps

Makes 2 wraps

Ingredients:

2 burrito size tortillas

2 cups chopped brisket

1/4 cup pico de gallo

1 avocado, diced

1 tbsp salsa

2 Tbsps sour cream

1 Tbsp cojita cheese

Pickled red onions

Directions:

In a medium size bowl, add all your ingredients then mix and set aside. Now heat your tortillas to make them more playable for rolling. Once hot, lay out on a cutting board and add your filling to both tortillas. Carefully roll your tortilla while at the same time tucking this sides in. Once tortillas are rolled, put in a non-stick pan with a bit of cooking oil. Toast both the seam side and the top side then cut diagonally and serve with guacamole.
