Chorizo and Egg Breakfast Tacos

Serves 2

Ingredients:

2 links APCO chorizo

2 eggs whisked

2 pinches Mexican cheese or cojita

2 flower tortillas

2 Tbsps salsa

Directions:

At the same time you are cooking the chorizo, start heating your tortillas. Whisk eggs together and set aside. Brown chorizo in a sauté pan over medium heat. Then add the eggs stirring with a plastic spatula until eggs are almost done. This is when you add the cheese. Spread even amounts of the mix on both tortillas and add salsa. Enjoy!
