Classic Caesar Salad

Ingredients:

1 head of romaine lettuce cleaned and cut into 1/2 slices

Sourdough croutons

1 large egg yolk

1 tsp anchovy paste

1 clove garlic grated

2 tsps Meyer lemon juice and zest from lemon

Dash Worcestershire sauce

2 tsps spicy mustard

1/3 cup olive oil

1/4 grated parm or pecorino Romano

Directions:

Clean your romaine lettuce and cut it then set aside. Combine egg yolk, anchovy paste, garlic, lemon juice/zest, Worcestershire sauce, and mustard. Whisk together then slowly add the olive oil at the same time as whisking until an emulsion forms. Add the grated cheese, salt/pepper and whisk again. Combine lettuce with the dressing tossing until lettuce is dressed. Add the homemade croutons and garnish with lemon juice/zest and grate some cheese over top and serve.
