Classic Caesar Salad

Ingredients:

1 head of romaine lettuce cleaned and cut into 1/2 slices

Sourdough croutons

1 large egg yolk

1 tsp anchovy paste

1 clove garlic grated

2 tsps Meyer lemon juice and zest from lemon

Dash Worcestershire sauce

2 tsps spicy mustard

1/3 cup olive oil

1/4 grated parm or pecorino Romano

Directions:

Wash and thoroughly dry the romaine lettuce, then chop it into bite-sized pieces and set aside.

In a medium bowl, combine the egg yolk, anchovy paste, garlic, lemon juice, lemon zest, Worcestershire sauce, and Dijon mustard. Whisk until smooth and well combined.

While whisking constantly, slowly drizzle in the olive oil until the dressing becomes thick, creamy, and fully emulsified. Stir in the grated Parmesan cheese, then season with salt and freshly ground black pepper to taste. Whisk once more until everything is well incorporated.

Add the chopped romaine to a large bowl and pour the dressing over the lettuce. Toss until every leaf is evenly coated.

Finish the salad with the homemade sourdough croutons, an extra squeeze of fresh lemon juice, a little more lemon zest, and a generous grating of Parmesan cheese. Serve immediately and enjoy.
